Ivy honey is aromatically strong and the flavour is also as strong. Ivy is one of the last things that flower during the year and the flowers start to appear at the end of the summer into the autumn, usually finishing when the frosts start.
This honey crystallizes quickly and with a hard texture. Ideal on toast, it melts into the toast rather than straight through and onto the plate. A good honey to put in those hot winter drinks when there are plenty of coughs and colds around.
